Hi! Thank you for the question. Personally, I would replace them with the same amount of water and a small piece of kombu, along with a bit of extra sugar. I hope this answer helps!

I would love to make batches of these as they seem pretty time consuming. Do you know if they can be frozen/recommendations to reheat them?
Thank you for the comment! My first recommendation would be to make a big batch and freeze them individually just after applying the panko breadcrumbs. That way, you can fry them straight from frozen and have them taste fresh. Alternatively, you can also freeze them after frying. However, you will need to reheat them in the microwave first, and then finish in the toaster oven to avoid them becoming soggy. I hope this helps!

Every time I cook with miso it burns and makes a hard mess. Do you have any tips?

Do you save the katsuboshi fir next time? I plan to make this authentic version. I have kelp already
You can reuse the used katsuobushi to make a second batch of dashi once, which we call niban dashi. Although I don't have a video for that, I have a guide article on how to make the second batch if you're interested. I know it says 6 servings but how many oz or ml does it make? just wondering if it's worth the time vs. buying. thank you very much.
6 servings is based on Japanese portions of two small scoops per person so this is just an estimate. I'm not sure about oz, but I would say it makes about 550ml of ice cream. It's easy to double or triple the recipe, although will take longer to freeze. Hope you try it, homemade matcha ice cream is truly delicious!

It's a brand called LUONTO by Iris Oyama, but I believe the product line has been discontinued!
